Grimaldi's Opens It's Fourth Nevada Location

    February 25, 2011

The restaurant group, headed by CEO Joey Ciolli, and his team are in a major expansion mode in Nevada and many other states. The company currently operates over 20 restaurants in Nevada, Arizona, Texas, New York, and Florida. With recent openings in Las Vegas and Fort Myers, Grimaldi’s Pizzerias’ expansion plan for 2011 includes Dallas, West Palm Beach, and various other sites TBA.

The highly anticipated Grimaldi’s Pizzeria, at Rainbow and the 215, is now serving award-winning, hand-tossed, coal-fired brick oven pizzas and calzones, fresh salads and delicious desserts.  This location is the fourth for the ever expanding restaurant brand.

In the world of pizza, Grimaldi’s is an institution that has garnered more awards than any other pizzeria in the country with more celebrity sightings than most 5-star restaurants.  Using only the freshest ingredients, a “secret recipe” pizza sauce, handmade mozzarella cheese and dough, Grimaldi’s serves traditional pizza (as it began in Naples, Italy) in an upscale yet casual, family oriented pizzeria.

Designed and built by hand, the coal-fired oven at Grimaldi’s Pizzeria delivers a unique flavor and consistency that is just not possible from wood or gas ovens.  Weighing in at 25 tons and heated by 100 pounds of coal per day, the oven heats up to 1,200 degrees.  The intense heat of the oven evenly bakes the pies to create Grimaldi’s famous crispy and smoky thin crust that Zagat has voted best pizza year after year.

It has been said that the secret to true New York-style pizza is the water.  Grimaldi’s believes that too, going to great lengths to keep the integrity of the water used in the Brooklyn pizzeria by hiring a chemist to analyze and recreate the mineral content and exact composition of the water to ensure the dough tastes the same in Las Vegas.

Grimaldi’s Pizzeria wholly owns and operates locations Nevada, Arizona, Texas and Florida. Locations in Reno, Summerlin, and Henderson have been a favorite to Nevada natives, the last few years.

Located at 7155 S Rainbow Blvd, Grimaldi’s Pizzeria is currently open for dinner only and will extend its hours later this month. Grimaldi’s offers guests a selection of beers as well as an extensive list of wines (by the glass and bottle) to complement their freshly prepared salads, hand tossed pizzas and calzones and famous desserts.  For more information on Grimaldi’s Pizzeria visit www.grimaldispizzeria.com

    Meet Grimaldi's Executive Chef

    July 19, 2011

    Chef S. Cory Lattuca

     cory1_resized.JPG

    AGE: 34

    HOMETOWN: Chandler, AZ

    PROFESSION: Executive Chef, Grimaldi’s Pizzeria

    CULINARY EDUCATION: Scottsdale Culinary Institute

Executive Chef Cory Lattuca was born in Rochester, New York, but grew up in Salt Lake City, Utah. His love for cooking came early on in childhood when he helped his grandmother prepare meals. The joy that food would bring to his family’s dinner table was more than enough for him to make a conscious decision to stay connected to it for the rest of his life. In 2003, he set out to achieve his early childhood goal and moved to Arizona to attend the Scottsdale Culinary Institute.

Becoming part of the Grimaldi’s Family

While getting his degree at the Scottsdale Culinary Institute Cory got a job at Grimaldi’s Pizzeria as a waiter. He would then go on to doing his internship at the Chandler Grimaldi’s working in the kitchen. He believed in the company and the products they served so much, that after graduation, he worked for them full time. After several years as a cook, Cory transferred out of the kitchen to become Corporate Chef and Food and Beverage Director for Grimaldi’s Pizzeria. Today, he is in charge of the wine and liquor list, and handles all aspects of Grimaldi’s food purchasing. Cory has helped Grimaldi’s Pizzeria grow from a single location to an empire of twenty restaurants. His focus on quality has been a driving factor for their growth.

With so much to love its no wonder why Cory enjoys his job and wants to share his passion for food with everyone. He is firm believer that happiness is cooking up fun and watching guests enjoy true pizza that made Brooklyn’s Bridge famous. Today, he feels extremely honored to have been involved in all the aspects of their growth.

Coal Burger set to Sizzle at Casa Paloma

    July 20, 2011

Scottsdale, AZ --- Grimaldi’s Pizzeria based in Scottsdale AZ, have unveiled plans to launch their third location of a new concept called Coal Burger, in Chandler Arizona. Coal Burger will be a fast casual dining concept that will utilize a similar coal-fired brick oven as Grimaldi’s Pizzeria, to flavor the burgers they serve. The third location is set to open at the ever growing Casa Paloma shopping center.

Named for the cooking method used to create the perfect burger, Coal Burgers offer a selection of natural grass-fed beef and Niman Ranch Natural Beef, cooked in a brick oven over piping hot coals, to sear in the juicy flavor. To further the flavorful experience, Coal Burgers are served on your choice of brioche, gluten-free, or wheat buns. Topped with a selection of flavorful cheeses, fresh produce, and top-quality condiments, Coal Burger prides itself in using organic or more naturally grown products, whenever possible.

Although, Coal Burger will be known for its savory coal-fired burgers, the restaurant has an expanded menu to offer even more healthy options.  Selections will include a vegetable and rice vegetarian burger and crisp Chef Inspired salads. A variety of delicious sides like sweet potato fries and seasoned french fries, all cooked in rice grain oil (notable for their higher amounts of antioxidants) are also available. Burger lovers can pair their meals with organic beer, biodynamic wine, thick organic gelato shakes, or Boylan’s self-serve natural fountain sodas.

Coal Burger is not just about great food and better ingredients. They have gone beyond simply offering more natural foods and have made the actual building more eco-friendly. Upon walking into the location you will notice reclaimed wood in the artwork framing, recycled natural nickel patina, PVC free banquette seating, and the more sustainable bamboo furniture. All of their napkins, paper towels and toilet paper on site are 100% post recycled product.

Coal Burger was founded on the concept of better food options and sustainability. Coal Burger founder, Joe Ciolli states “Coal Burger is an exciting new concept in today’s restaurant marketplace. The delicious smoky flavor of cooking in a coal fired oven, paired with natural ingredients, makes us believe we have a winning combination.”

The first location of Coal Burger opened in Scottsdale Quarter Last spring.

"Food & Drink doesn't typically review chain restaurants. Standardization is almost never culinarily compelling, and good food rarely emerges from corporate committees.

But once in a very great while, a chain restaurant has the right bona fides -- and enjoys enough praise from people who know food (as opposed to those who simply like to eat) -- that Food & Drink must perforce take notice. And dig in. And assess."
