on Grimaldi’s Coal Brick-Oven pizza together?
One rainy day in Connecticut, Grimaldi’s Executive Chef Cory Lattuca spent an afternoon at the home of Villa Pozzi’s Founder and Winemaker Daniele Pozzi to see what magic would happen when you pair Villa Pozzi Nero d’ Avola wine with Grimaldi’s Traditional Cheese Pizza.
From the many vegetables and proteins available that day, Daniele and Cory selected Italian sausage, as it perfectly paired with the wine. With trial and error, they decided to place freshly-sliced onions in a bath of the Villa Pozzi red wine and place the mixture in the pizza oven. The result? Delicious, wine-braised onions, which joined with savory Italian sausage and plenty of fresh basil to become the Sausage and Wine-Braised Onion pizza. It’s a unique and original flavor for this winter’s seasonal menu.
What started as a collaboration of two food enthusiasts became a partnership between two friends. We’re proud to offer our newest pizza creation for you through March 2nd.
