The quality of our cheeses makes all the difference in the taste and quality of our famous New York style pizzas. Fresh mozzarella has a very mild and delicate taste that pairs well with the bolder flavors of our tomato sauce and savory toppings. Unlike its shredded counterpart, hand sliced mozzarella melts evenly and doesn’t create grease like most shredded cheese.
Mozzarella is extremely versatile ingredient and used in nearly all our dishes like the traditional Caprese – slices of fresh mozzarella, tomatoes and fresh basil topped with a drizzle of extra virgin olive oil. You can also add fresh mozzarella as a topping to any of our salads.
Quattro Formaggi Pizza
The Quattro Formaggi is the cheesiest of our signature Chef Selections at Grimaldi’s, boasting not four as the name suggests, but five different cheeses spread over our delicious New York style pizza crust. We then place it inside our famous coal-brick oven, melting the blend of cheeses in a matter of minutes. This sauce-less, white pizza is the perfect blend of fresh hand sliced Mozzarella, sharp Asiago, freshly grated Parmesan, Pecorino Romano, and creamy Gorgonzola cheese.
Traditional Margherita Pizza
If you’re craving something a little brighter, our Margherita Pizza is the perfect option. It features classic toppings of cheese, basil and our San Marzano tomato sauce, but dialed up to give extra flavors with more plentiful amounts of each.
If you’ve never tried a Calzone, you are in for a treat! Our calzones are made from the same hand-tossed dough as our pizza crust filled with generous portions of ricotta, mozzarella, plus the toppings of your choice, folded in half and crimp-sealed, then baked in our coal-fired brick oven. Served with Calzone Sauce on the side, our San Marzano tomato sauce with extra garlic and spices.
